Oolong teas are made by ‘bruising’ the leaf (by breaking the cell walls of the leaves) this starts the oxidation process, half way through the oxidation process the leaves are fired to cease any further oxidation, thus stopping it turning into black tea

Flavour is fragrant & fruity with a warm soft, buttery nutty base …even after the third infusion
